Corvina, Corvinone, Rondinella, Molinara
VINEYARD: The grapes used to produce this wine are grown with the pergola system. The soil is of morainic type located in the southern bend of Lake Garda.
HARVEST: By hand, in the first half of September.
VINIFICATION OF THE BASIC WINE: Partial cold maceration on the skins, with subsequent pressing. The must obtained is cold decanted and inoculated with selected yeasts. To accentuate the varietal aromas, the fermentation temperature does not exceed 18°C.
AGEING: The wine is kept on its lees for about 6 months, with periodic stirring of the fine lees.
REFERMENTATION: The base wine is added sugar and yeasts and refermented in steel tanks.
TASTING NOTES: A fine and persistent perlage embrace the fruity and pink notes typical of the eastern shore of Lake Garda. It is an excellent wine as an aperitif and with crudités, pleasant throughout the meal and suitable for any occasion.
SERVING SUGGESTIONS: Perfect as an aperitif, it goes well with appetizers, light pasta dishes, pizza, freshwater fish and sushi.
