GRAPE: Garganega.
VINEYARD: The vines which go to produce this wine are trained on a pergola. The land is typically morenic situated on the south bend of Lake Garda.
HARVEST: By hand, from the second half of September.
VINIFICATION: The grapes are lightly pressed. The must is clarified cold for settling and fermented with selected yeasts at a controlled temperature in stainless steel containers.
MATURING: The wine is conserved on its own yeasts for 6 months approximately.
ORGANOLEPTIC CHARACTERISTICS: This wine expresses a precise personality which is tied to very evident and elegant fruited scents. Mineral, acid and softness pleasantly unite to the palate. It presents structure, duration and harmony.
PAIRINGS: A perfect aperitif; with fish based appetizers including delicately smoked, and fish first courses.
SERVING TEMPERATURE: Serve at between 10-12°C.
